  • The Food Safety Modernization Act has one rule directly affecting carriers transporting food that must be temperature-controlled for safety: the Sanitary Transportation of Human and Animal Food Rule (STHAF). The rule is only concerned with food safety and not food quality.

    The shipper is ultimately responsible for the safe transportation of food products. The food handling characteristics determine when a temperature-controlled trailer and a set temperature range are required to keep food safe for consumption under the STHAF rule.

    The shipper can enter into a written agreement assigning responsibilities to carriers such as equipment type, driver training, trailer cleanliness and sanitation, and reporting irregularities in transit and at delivery.

    The temperature-in-transit requirements should be evident in the food shipper's contract or specific load instructions so that you can determine the trailer type.
